Medina Apple Pie Recipe

1 T. lemon juice
1 c. sugar
2 T. all-purpose flour
1/2 tsp. cinnamon
1/8 tsp. nutmeg
1/8 tsp. salt
6 – 8 tart Texas apples, peeled, cored, & thinly sliced (approx. 6 cups)
Pastry for 2 (9-inch) deep-dish pie crusts
Sugar

Preheat oven to 400 degrees. Sprinkle apples with 1 T. lemon juice. Combine sugar, flour, cinnamon, nutmeg, and salt. Mix with apples. Line 9-inch pie pan with pastry. Fill with apple mixture and dot with butter. Put on top crust, cutting slits for the steam to escape. Seal edges. Sprinkle with sugar. Bake for 50 minutes. Serve warm.


Jam Cake

(Serves 12 small squares)
2 sticks butter
1 c. sugar
2 c. flour
3/4 c. pecans
2 egg yolks
3/4 c. preserves (of choice)*

Cream butter and sugar. Add flour, nuts, and egg yolks. Spread one-half mixture in 8″ x 8″ greased pan. Put preserves* in the center. Put other half of the dough on top and seal edges. Bake 1 hour at 325 degrees.
To serve: Drizzle with hot Cider Sauce*

*Preserves: Use Love Creek Apple-Pie-In-A-Jar or Love Creek Apple Raspberry Jam

Love Creek Apple Enchiladas

8″ x 8″ Glass Dish
1 Jar of Love Creek Apple-Pie-In-a-Jar
1 Bottle of Love Creek Cider Sauce
6 Flour Tortillas
Preheat oven to 350 Degrees

Place 1/3 cup Love Creek Apple-Pie-In-Jar pie filling in each tortilla. Roll the filling up in the tortilla and place seam side down in the pan. Repeat for the remaining tortillas. Heat Cider Sauce in the microwave until hot. Pour 1/2 bottle of hot sauce over the enchiladas to cover. Heat enchiladas in oven until warm. Sprinkle with powdered sugar and pecans, then serve. Enjoy!


Chicken with Love Creek’s Apple Peach Cobbler Jam

6 Chicken Breasts
1 1/2 c. Apple Peach Cobbler Jam
1/2 c. Russian dressing
2 T. Fresh rosemary

Mix jam and dressing together. Spread over chicken. Sprinkle with rosemary. Bake at 325 degrees for 45 – 60 minutes.

 


Acorn Squash

Cut squash in half and place face down in a Pyrex dish with enough water to cover bottom of dish. Microwave on high for 10 minutes. (This time will vary according to size of squash. You want it soft like a baked potato.) Turn halves over and scoop out seeds. Fill cavities with either Love Creek Applesauce (see below), Love Creek Jalepeno Jelly, or Love Creek Apple Pie Jam. Put back in microwave to heat thoroughly.

 


Applesauce

6 c. apples, cored & chopped, not peeled (6-7 medium apples)
2 TB. water
1 tsp. lemon juice
1/2 c. brown sugar
1/4 c. sugar
1 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. salt

Combine all ingredients in a 1 1/2 qt. casserole. Cook in microwave oven (covered) on full power for 4-6 minutes, or until apples are tender. Mash or put through sieve if desired.


Pie Toppings

1 c. coarsely chopped pecans
2/3 c. dark brown sugar
3 T. melted butter

Cool pie; make topping. Put on pie and place under broiler. Watch closely!! When bubbly and sugar is melted, it’s done!
